(a) Putting it in the checked-in luggage can be too risky for some people (b) You can't take it in your hand luggage (c) Even if you find the wine you wanted to take in the departures lounge, not all shops appear to be able to seal it for transit so you run the risk of having it confiscated at some point in your journey. It doesn’t help not being able to take wine back home so easily on a plane.
